Ginger Bread


2 cups plain flour
1 tsp mixed spice
1 tsp ground ginger\1/3 cup golden syrup
45g butter
3 tbsp brown sugar
1 tsp bicarbonate of soda
1 tsp water
1 egg yolk


  1. Preheat oven to 190° C.
  2. Sift flour and spices into a large bowl.
  3. Place golden syrup, butter and sugar in a small saucepan and heat gently until smooth.
  4. Dissolve bicarbonate of soda in water. Add to the four with the melted mixture and egg yolk.
  5. Mix to a soft dough and knead briefly. Wrap in plastic wrap and leave to rest in the refrigerator for 30 minutes.
  6. Roll out dough to cm thickness and cut into desired shapes.
  7. Bake for 5 8 depending on size of shapes, until lightly browned, do not over cook.
